This spiky stunner gets its name because its rosette of thick, blue-green leaves looks a lot like a giant artichoke. While it’s native to the deserts of Mexico, the artichoke agave thrives in southern Utah’s dry, sunny conditions, making it a popular choice for xeriscaping.

Like its agave cousins, it’s a “once-in-a-lifetime bloomer.” After years of soaking up the desert sun, it sends up a tall flower stalk with clusters of yellow blossoms. Once it blooms, the plant dies, but don’t worry—it usually leaves behind baby agaves, or “pups,” to carry on the legacy. Whether you spot one on a hike or in someone’s yard, the artichoke agave is a desert diva that’s both tough and totally photogenic!
